Estudio de viabilidad para la elaboración de guacamole en polvo como aprovechamiento de las categorias segunda y tercera resultantes de la producción de aguacate HASS (Persea americana) en la empresa Frutales las Lajas S.A.

Abstract

The objective of this work is to determine the viability of the creation of a new line for the preparation of powdered guacamole as the use of the second and third categories, resulting from the production of avocado has within the company FRUTALES LAS LAJAS SA in the Municipality of Zarzal in the department of Valle del Cauca. For the previous, the authors, a deep investigation that touched aspects of the economic sector, the market conditions, the product, the price; Likewise, a careful analysis was made of the technical conditions for the new production line, of the administrative and legal requirements, the investment needs were established; The financial statements are projected and an agreement is reached through the application of the financial results such as the Net Present Value (NPV) and the Internal Rate of Return (IRR), the feasibility. During the investigation it was necessary to take into account the technical knowledge of the new production line and the current freeze-drying methods of the avocado, this work is complemented by analyzing the environmental and social impact that can be generated in the region when starting up the new production line El presente trabajo tiene como objetivo determinar la viabilidad de la creación de una nueva línea para la elaboración de guacamole en polvo como aprovechamiento de las categorías segunda y tercera, resultantes de la producción de aguacate hass dentro de la empresa FRUTALES LAS LAJAS S.A en el municipio de Zarzal en el departamento del Valle del Cauca. Para lo anterior, los autores realizaron una investigación profunda que tocó aspectos del sector económico, de las condiciones del mercado, del producto, del precio; igualmente, se efectuó un análisis de las condiciones técnicas para la nueva línea de producción, de los requerimientos administrativos y legales, y se establecen las necesidades de inversión, además se proyectan los estados financieros y con base en ellos se aplican los procesos evaluativos para la toma de decisión sobre la viabilidad del proyecto.
